Over twenty years inside premium hospitality. From head bartender to assistant general management, from owner-operator to brand ambassador — across international hotel openings, heritage conversions, independent ventures and globally award-winning institutions in Sydney, Singapore, Bali, London and Prague. Kamil has opened venues, co-founded venues, restructured venues, and run them at capacity. He has worked inside drawings that translated cleanly into functioning operations, and inside drawings that did not. The difference is rarely accidental.
Kamil Foltan Consulting is the formalisation of that career into independent advisory. The practice sits between architects, interior designers and developers shaping premium hospitality — bringing operational and commercial intelligence to the design table, early enough to be acted on, before the venue becomes the operator's problem.
Kamil is currently Assistant General Manager at Shell House, Sydney — a four-outlet, 500-capacity heritage venue. The consultancy runs in parallel, scoped to advisory engagements that draw on operational experience rather than active venue management.
Architecture as a lens, not an addition.
ORIGIN
Kamil grew up in Prague, inside one of Europe's densest concentrations of preserved Gothic, Baroque, Renaissance and Cubist work. That early reading of architecture has shaped every venue he has worked in since.
His career has been spent inside buildings of architectural significance — Capella Sydney, the 1910s sandstone former Department of Education; Shell House, a 1939 Art Deco landmark in the Sydney CBD; the Zetter Townhouse, a Georgian property on a protected Clerkenwell square; The Black Swan, a 1930s heritage shophouse on Singapore's Cecil Street. Each was a hospitality venue inside a piece of architecture with its own logic, its own constraints, and its own claim on how the operation could sit within it.
The practice is shaped by that lens. Space is read as architecture before it is read as a floor plan.
